WHY WE ROAST OUR OWN BEANS

At Doxa, we roast with purpose. Our goal is to make specialty coffee feel approachable, meaningful, and enjoyable for everyone. We roast in small batches to bring out the best in every origin—whether it’s a vibrant Ethiopian natural, a balanced Guatemalan, or a smooth Colombian decaf. Each roast is tailored to highlight the unique flavor notes of the bean, and we cup every batch to ensure it's hitting our standard of excellence. Great coffee doesn’t happen by accident—it’s a mix of science, intuition, and a whole lot of care. At Doxa, we roast because we love people, and we want that to come through in every bag.

WHY WE USE BELLWETHER

Using our state-of-the-art Bellwether electric roaster, we’re able to craft consistent, high-quality coffee with a smaller environmental footprint. It’s a closed, ventless system, meaning we can roast clean, fresh coffee right in our community without smoke or emissions. Small-batch roasting also gives us greater control and consistency, letting each coffee’s origin shine.

our philosophy

We roast three single-origin coffees: Guatemalan, Ethiopian natural, and Colombian decaf. Roasts are tailored by origin to highlight natural flavor notes—whether fruity, chocolatey, or bright. Every batch is cupped for quality control before being packaged and sold. We roast multiple times a week to keep coffee fresh, dialed in, and ready for shelves or brewing. We source our single-origin coffees with transparency and traceability in mind — building meaningful supply chain relationships and paying attention to impact at every step. Whether you’re buying a bag to brew at home or grabbing a pour-over at our bar, you can trust that each roast was handled with consistency, care, and purpose.
